Meatless Mondays, and it is still grill season. How can you survive a Monday without meat, without complaining, and without feeling hungry? Look no further.
Ratatouille Grill Bags - (Makes 4 Servings)
What you need:
- 1/4 Cup Fresh Basil Chopped
- 4 tbsp of Minced Garlic
- 2 Eggplants Large (cut in slices)
- 4 Roma Tomatoes Large (cut in slices)
- 1 Red Onion (cut in slices)
- 2 Large Zucchinis (cut in slices)
- Chili Powder
- Herbs de Provence Mix
- 4 tsp Apple Cider Vinegar
- 4 tsp Olive Oil
*If you don't have grill bags, no problem use heavy duty foil to make a pocket. After you have added all the ingredients make sure you roll the edges tightly so nothing leaks onto the grill.
If you have little hands helping in the kitchen each person can prep their own grill bag. If not toss all of the ingredients into one big mixing bowl and then divide the contents into equal portions for each grill bag. Cook on Medium-High on the grill for 15-20 minutes or until the vegetables are soft. If you are feeling extra hungry you can add some cheese on top, or place the contents of the grill bag into a pita bread.
